Gin is made from a neutral spirit that has been flavored with a range of botanicals, dominated by juniper, but including coriander, citrus peel and licorice. The best gin producers use a superior range of distillation techniques to extract the flavors from the botanicals, and their products are made from a higher quality base spirit. Taste characteristics include exotic aromas and flavors of juniper, citrus and spice balanced by a crisp, dry finish. Gin is a product of the blender’s talent and skill. It is unaged, and except for some dilution with water, it is bottled just as it comes from the still.

Gin fermentation process is similar to that of whiskey. Following fermentation, the resulting liquid is distilled and rectified through a column still, producing a pure spirit of at least 190-degree proof. Distilled water is added to reduce the spirit to 120-degree proof. The liquid is then redistilled with the many flavoring agents referred to as botanicals.

Gin is basically a distilled grain spirit flavored with extracts from different plants, mainly the juniper berry. Gin drinks have a distinctive, herbal taste that seems to draw very clear-cut reactions from imbibers. The name is derivative of its main ingredient, from the Dutch word jenever. Although gin has been produced and consumed for centuries, the methods for making the quality gin drinks today have been around only since the start of 20th century. Gin is made when juniper berries are distilled with a grain mash and other flavors such as cassis, coriander, fennel, ginger, lemon peel, and a host of other special botanical flavorings.

The name comes from "genievre," French for juniper.Gin liquor is a flavored white spirit. All gin is flavored with juniper berries, and usually other botanicals, like lemon, coriander, angelica, licorice roots, bitter almonds, and orange peel. Each distiller guards the secret of his own botanicals, since they provide the only characteristic distinguishing one brand from another. Twelfth Century historical records reveal a distillation practiced for medical purposes that may be attributed to Chinese, Persians and Arabs. In 1650, Franciscus Sylvius, Dutch doctor in the city of Leyden, Holland infused juniper berries into distilled spirits in a search for a cure to kidney and stomach disorders and created "jenever" gin liquor. By 1685 the Dutch were exporting more than 10 million gallons a year and by the early 1700's the craze spread to London, England. The English Parliament was highly concerned with the 11 million gallon a year consumption and unsuccessfully enacted laws to stem the flow of gin. Around 1850 the reputation of gin spread to the upper classes and was served in many of the gentlemens clubs in London and elsewhere in Great Britain.
