Scotch whisky is malt whisky or grain whisky made in Scotland. All Scotch whisky was originally made from malt barley. Distilleries began introducing whisky made from wheat and rye in the late eighteenth century. Scotch is divided into five distinct categories: single malt Scotch whisky, single grain Scotch whisky, blended malt Scotch whisky formerly called "vatted malt" or "pure malt", blended grain Scotch whisky, and blended Scotch whisky. All Scotch whisky must be aged in oak barrels for at least three years. Any age statement on a bottle of Scotch whisky, expressed in numerical form, must reflect the age of the youngest whisky used to produce that product.

Single malt whisky is a whisky made at one particular distillery from a mash that uses one particular malted grain, which is ordinarily barley. Single malts are typically associated with Scotland, though they are also produced in various other countries. Under the Scotch Whisky Regulations, a "Single Malt Scotch Whisky" must be made exclusively from malted barley and must be distilled using a pot still and must be aged for at least three years in oak casks of a capacity not exceeding 700 liters.

A blended malt, also called Pure Malt, is a blend of different single malt whiskies from different producers and distillers. Blended Malts are created by mixing distillations from multiple producers. Unlike a blended whisky, blended malts do not contain any grain whisky. The blended malt, single malt, pure malt are known as scotch whisky.

Blends: Blended Malt is a whisky which is blended from a number of different single malts from different distilleries. Unlike a blended scotch whisky, blended and pure malts do not contain any grain whisky. The blended malt, single malt & pure malt are known as Scotch Whisky.

Scotch grain whisky is usually made from a combination of malted barley and either maize or wheat. The starch in the non-malted cereals is released by pre-cooking and converted into fermentable sugars. The mashing and fermentation processes are similar to those used for malt whisky. The wash is distilled in a Coffey or Patent Still, named after its inventor Aeneas Coffey. It has two tall columns - a rectifier and an analyzer. Cold wash is pumped in at the top of the rectifier and meets steam. The alcohol is cooled, condenses and flows away as Scotch grain spirit. The distilled grain spirit is lighter in character and aroma than most malt whisky's and therefore requires rather less time to mature. The vast majority of matured grain whisky is used for blending.

90-percent of the Scotch whisky consumption in this country can be attributed to brands of blended whisky. The object of blending has always been to soften, in a sense, the harsher characteristics of the individual malt whiskeys with the intention of producing one with widespread appeal.

As the word implies, blends are the result of mixing different whiskeys together, including both single malts and grain whiskeys. Located mainly in the Lowlands, 14 Scottish grain distilleries produce grain spirits (which are in fact whiskeys, not, as is sometimes misinterpreted, neutral grain spirits), made primarily from corn. They are distilled in tall, column stills, a method that is faster and less expensive than the pot still.

Numerous variables determine the ultimate character of a blended Scotch, such as the quality of the barley, the amount of peat used, the length of the second distillation and decisions about when each particular cask is ready to be added to the blend.

This last step is an art as well as a science. Each Scotch house has its own closely guarded blend. Usually there are 20 to 25 different single-malt whiskeys used in a blend, and although the exact proportions are not known, anywhere from 20-percent to 50-percent malt whisky will be used in a blend, with the rest being grain whisky.

Blended scotch whisky may contain a combination of whiskies from over 40 or 50 different malt and grain distilleries. The normal ratio of malt to grain is 60 percent grain 40 percent malt. The percentage of malt used will determine the quality and smoothness of taste and character. Each whisky used in the blending process will normally have been matured for about 5 years, however there are a number of higher aged blended scotch whiskies available.
