Few Single Malt Whisky is crafted exclusively from malted barley. Unlike traditional single malts, however, the whisky is crafted using both cherry wood smoked barley (this imparts a sweet, slightly smoky flavor) and unsmoked two-row barley. After distillation, the single malt is matured in custom-made oak barrels from Minnesota. "The cooper I eventually chose to make our barrels won 24 out of 25 categories at a spirits competition I visited," Hletko says. "I'm no math major, but that's the cooper I want to make our barrels."

As a result, the single malt has an aroma of fudge, vanilla and salted caramel. Notes of turmeric, cherry, espresso beans, honey and graham crackers dominate the palate, and lead to a finish with hints of apples, oak, smoke, cinnamon and caramel.

Few Rye Whiskey is made from a mash of 70% rye, 20% corn and 10% malted barley. Few Bourbon Whiskey is made from a mash of 70% corn, 20% barley and 10% rye. "The corn comes from a farmers co-op in Indiana and my barley and rye from farmers in Wisconsin,"notes Hletko. After mashing and fermenting the grains, Hletko distills the wash through his 1,500-liter Kothe copper-pot still.

After distillation, the rye and bourbon are aged in custom-made oak barrels from Minnesota. "The cooper I eventually chose to make our barrels won 24 out of 25 categories at a spirits competition I visited," Hletko says. "I'm no math major, but that's the cooper I want to make our barrels." The #3 char on the barrels gives Few Rye hints of allspice and peppercorn, which are followed by notes of dark caramel and cinnamon. In addition, the casks contribute slightly sweet hints of honey and vanilla to Few Bourbon, which are nicely balanced by a spicy finish that intensifies as it lingers. After aging the rye and bourbon, Hletko and his team of distillers fill and label each bottle by hand.

Few Rye Whiskey was named the 2013 Craft Whiskey of the Year by Whisky Advocate. Few Bourbon Whiskey earned the Silver Medal at the San Francisco World Spirits Competition in 2012.


Awarded a gold medal by the Beverage Tasting Institute in 2014, the FEW Bourbon is a high-rye bourbon from Illinois that uses a “special peppery yeast” to give it a little something extra to bring up the spice level and add a new dimension to the whiskey. It’s also aged in, relatively, young Minnesota oak barrels which it seems lends a peculiar and unique herbal quality to the bourbon that isn’t unpleasant, but it sure is different.

Based out of Evanston, IL FEW takes it name from Frances Elizabeth Willard who was the co-founder of the Women’s Christian Temperance Union. The WCTU was a key player in establishing the national Prohibition and is also based out of Evanston. Though the name isn’t the only thing they get from their home in Illinois. Each bottle is adorned with images of the 1893 World’s Columbian Exposition which was held in Chicago after it’s devastating fire and when it comes to their ingredients they try to keep it as local as possible there as well.

To quote their founder and master distiller Paul Hletko “If we can’t grow it ourselves, we buy it locally and if we can’t buy it locally we buy it from friends.” Which according to FEW means that all of the grains used in their products are “grown less than 100 miles from the distillery and many other ingredients are sourced from even closer”. They strive to make all of their products a unique representation of the area they’re from… and it shows. These guys are definitely among the few doing craft distilling right.
