Papa’s Pilar Dark Rum

The rums themselves are a classic, molasses distillate and sourced from around the Caribbean, then bottled and blended in the United States.  The rum is listed as 24 years aging and this is accomplished via the solera method of aging, which involves retaining a fraction of the oldest barrel 24 years and blending with the next older barrels and so forth.  The barrels used in involve a variety of French oak, port wine, ex-bourbon, and Spanish wine barrels, all of which impart different flavors into the final product and chosen at the discretion of the blender.  It is then finished in Spanish sherry casks giving it a final character.  The rum is bottled and blended at Strong Spirits in Kentucky. The brand is owned by the Hemmingway Rum Company.

Complex notes of vanilla, cinnamon, dark Italian roast coffee and honey, with hints of sherry and port. Intricately flavorful; sweet mixed with earthy, vegetal tones. Mouth-coating with hints of spice, bourbon, almonds and apricot. Robust, exotic and full- bodied with a long, deep, velvety finish.

Papa’s Pilar Blonde Rum

The rums themselves are a classic, molasses distillate and sourced from around the Caribbean, then bottled and blended in the United States.  Papa's Pilar Blonde rum is aged for 3 years and then given a light filtration for clarity.  To us, this implies a wood-like subtle depth to what other silver rums would offer in cocktails.  We've opted to list it as a silver rum to better represent it in its peer group.  The rum is bottled and blended at Strong Spirits in Kentucky. The brand is owned by the Hemmingway Rum Company.

Rounded nose with citrus notes of grapefruit, mandarin and key lime mixed with vanilla, oak and a touch of crisp almond. Creamy mouth with buttery vanilla taste. Layered with soft mango, orange peel and hints of pineapple.Nutty, clean and exceptionally smooth.

Even at the helm, Hemingway was never a spectator, and Papa’s Pilar Blonde is crafted to harness that same spirit of adventure. This crisp blend is distinguished, worldly, and lasting. Just like Papa himself.

Ernest Hemingway was this type of man – an adventurer who lived life to the fullest. He indulged us with glimpses of a vibrant life by stitching together distant cultures, passions, and people using the power of the written word.  

Inspired by his appetite for adventure, we’ve proudly created a super-premium rum: Papa's Pilar.  It is a spirit born of multiple rums hand-selected from the Caribbean, Central America and Florida. The rums are then brought to the U.S.A. and married together in our unique Solera aging and blending process.

Papa’s Pilar Dark and Blonde rums are crafted to reflect Hemingway’s passions on both land and sea.

If the shape looks familiar, that’s because it’s styled after the aluminum canteens carried by US infantryman for most of the 20th Century. The bottle pays homage to Hemingway’s duty as an ambulance driver in Italy during World War I and his exposure to the Normandy landings in World War II. Why the chain? US infantry canteens used a chain to tether the screw cap to the bottle.

The cap could be left slightly loose on the march - allowing drops of water to slosh out and soak the canvas covering. Evaporation kept the contents cool. Last but not least, etched into Pilar’s bottle cap is a compass - the simple yet indispensable tool that provides comfort and direction to adventurers on land and sea. The compass on Pilar Dark's cap has the  African Sun logo in its center, signifying Hemingway's adventures on land.
